Grilled Ribeye Steak with Herb Rub

  • 2 thick-cut Ribeye steaks
  • 1/4 cup olive oil
  • 2 Tbsp chopped fresh herbs of your choice
  • 1 clove garlic, minced or pressed
  • Kosher salt and fresh cracked black pepper

A thick, juicy steak marinated in fresh herbs and garlic then grilled till perfectly done.

Begin by preparing your herb oil so it can infuse. Combine the oil, herbs and garlic in a small container and set aside. Heat your grill so that one side is very hot and one side is on very low. Lightly rub your steaks with oil and season them with salt and pepper. Place them on the hot side of the grill and leave them there for 1-2 minutes to achieve nice black grill lines. Turn them 90° to make a cross hatched pattern. Flip the steaks and move them to the low side of the grill. Close the lid and cook until steaks are cooked to your desired doneness. Remove, rest and serve with herb oil spooned over the top.

This recipe can also be prepared on the stovetop. Heat a cast iron skillet over high heat. Add oil and heat until smoking. Carefully place the steak in the skillet, cooking for 3 minutes. Turn and cook for another 3 minutes, and then turn again and cook for another 3 minutes. Sear the sides of the steaks as well.
