Grilled Seitan and Vegetables with Barbeque Sauce
- 1 lb. seitan; cut in large chunks or wide strips
- 1 large onion; cut in thick rings
- 2 green peppers; cut in large chunks or wide strips
- 4 tbsp. vegetable oil
- 2 tsp. salt
- 2 tsp. freshly ground black pepper
- Sauce-
- ½ cup tomato sauce
- ¼ cup molasses
- ¼ cup cider vinegar
- ¼ cup lemon juice
- ¼ cup Dijon mustard
- ¼ cup soy sauce
- ¼ cup honey
- 1 ½ tsp. each coriander, cumin, chili powder, garlic powder, ground black pepper
- 1 tbsp. fresh garlic; minced
- 2 tbsp. espresso
In a small sauce pan, combine all ingredients for sauce, and simmer for 30 minutes. Taste and adjust seasoning if needed. Meanwhile, preheat grill or grill pan, and prep seitan and vegetables. Toss the seitan in half of the oil, salt, and pepper, and grill until lightly charred and warm. Toss onions and peppers in the remaining oil, salt, and pepper, and grill until tender, and lightly charred. Toss grilled vegetables and seitan in sauce.
