Herb Roasted Potatoes

  • 2 lb. red skinned potatoes; halved
  • 3 Tbsp. Olive Oil
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. oregano
  • ½ tsp. basil
  • ½ tsp. thyme
  • ¼ tsp. onion powder
  • ¼ tsp. garlic powder

Preheat oven to 400 degrees. Toss all ingredients in a large bowl until thoroughly coated, adjust seasoning with salt and pepper as needed; to taste. Spread potatoes on a sided baking sheet and roast until golden and tender, about 45 minutes, depending on the size of your potatoes. Enjoy!
