Kombu Seaweed Salad
- 1 oz dried kombu seaweed
- 2 tsp rice vinegar
- 1 Tbsp tamari
- 1 Tbsp sugar
- 1 Tbsp fresh grated ginger
- 1 Tbsp minced garlic
- 1 tsp sesame seeds
Cut kombu into thin strips. Place in a small saucepan with the rice vinegar. Add enough water to cover kombu. Bring to a boil and simmer on low heat until softened. Add the tamari, sugar, ginger and garlic. Simmer until liquid has evaporated. Remove from heat and add sesame seeds.
