Late Night Snack Artichokes

2 artichokes; quartered

1 lemon

EVOO; as needed

Kosher salt; as desired

 

 

Heat oven to 4oo degrees. Place artichoke pieces on a parchment lined baking sheet and drizzle generously with olive oil. Sprinkle with salt and toss well. Bake for approx 20 minutes until artichokes are getting golden but not so crispy that the tips break when you touch them. While still on the hot sheet tray, squeeze fresh lemon juice over and toss well. Pour onto a dish and pull artichokes apart leaf by leaf, using your teeth to scrape off the ‘meat’ at the inner portion of the leaf.
