Maple Parfaits
For granola:
- 1 1/2 cups old-fashioned rolled oats
- 1 cup slivered almonds
- 1/4 cup extra-virgin olive oil
- 1/4 cup maple syrup
- 1 tsp. vanilla extract
- 1/2 tsp. ground cinnamon
- 1/4 tsp. kosher salt
For parfaits:
- 1 quart grass-fed vanilla yogurt
- 2 pounds mixed berries, fresh or frozen and thawed
To make granola:
Preheat oven to 325°. In a large bowl, mix together granola ingredients and stir to coat. Spread mixture on a rimmed baking sheet and bake 30 minutes or until dry and crisp, stirring once.
To make parfaits:
In each of five glasses or jars, layer 1/2 cup yogurt, a scoop of berries, and another 1/4 cup yogurt. Top each parfait with 1/4 cup granola just before serving.
