Potato and Onion Empanadas with a hint of Smoked Paprika

  • 3 large russet potatoes, peeled and diced
  • 1 onion, diced
  • 1/4 cup olive oil
  • 1/2 tsp paprika
  • Kosher salt and fresh cracked black pepper

In a large skillet, heat the oil and add the potatoes and onions. Let he mixture cook, browning the potatoes and onions on all sides. When the potatoes get soft, start mashing them with the back or a wooden spoon.  When the onion is soft and the potatoes are mashed add the paprika and cook one minute more until it becomes very fragrant.  Season to taste with salt and pepper and set aside.
