Roasted Green Beans with Pearl Onions

  • 2 10oz bags of pearl onions
  • 2 TB olive oil
  • Kosher (course grain) salt
  • 1 1/2 lbs green beans, trimmed
  • 6 garlic cloves

Blanch the onions by dropping them into boiling water for about 2 minutes, drain and cool. Peel, trimming the stem end and slipping off the skins. Drizzle with about 1 TB fruity olive oil, sprinkle with
salt, toss to coat. Spread on a shallow baking pan and roast in a 400 degree oven, stirring several times, for about 40 minutes, depending on their size, until softened a bit and golden. In a bowl, toss the green beans, garlic, remaining olive oil and a light sprinkling of kosher salt. Spread on a shallow baking sheet and roast for 30-40 minutes, stirring occasionally, until they start to brown and wrinkle a bit. This can be done at the same time the onions are roasting, rotating racks if necessary for even roasting. When done, mix them together, adjust salt, pile on a large platter to serve.
