Sausage Queso Dip
- 1 1/2 cups American cheese cut into quarters
- 1 1/2 cups queso fresco crumbled
- 2/3 cups half and half
- 1 cup chopped green chilis
- 1 lb smart chicken country breakfast sausage, chopped finely
- Olive oil, as needed
Heat olive oil in a medium pot over medium heat and brown the sausage. Add the chilis and saute for 2 minutes to develop the flavor.
Add cheeses and half of the half and half over low heat. Stir frequently as the cheese melts. Once the cheese has melted stir in the remainder of the half and half. Once cheeses and half and half are combined it is ready to serve. Serve with tortilla chips.
