Scallion & Ginger Hummus

  • 3 15 oz cans chick peas
  • 2 large cloves garlic
  • 4 Tbsp tahini
  • ½ cup water
  • Juice of one lemon and 2 limes
  • 1 Tbsp sea salt
  • 2 tsp fresh cracked black pepper
  • 1 Tbsp fresh thyme
  • 2 tsp fresh parsley
  • 1 tsp cumin
  • ¾ cup fresh scallions
  • ¼ cup fresh ginger
  • 3-5 dashes extra virgin olive oil

Chop scallions and ginger. Drain and rinse the chick peas. Mix all ingredients together in food processor and blend until combined and smooth. Scoop hummus into a serving dish and splash with olive oil to finish. ENJOY!
