Spicy Hunan Noodles
- 1 lb linguini
- 1 15 oz can black beans, rinsed
- 2 2/3 TB tomato paste
- 2 2/3 TB tamari
- 2 tsp rice wine vinegar
- 1 1/3 TB minced garlic
- 1 1/3 TB sesame oil
- 1 tsp sriracha chili sauce
- 1 1/3 TB rice syrup
- 1 tsp lime juice
- 1 TB sambal chili sauce
- 3 scallions, trimmed, minced
Bring a large pot of salted water to a boil. Add pasta, stir, and cover with lid until water returns to a boil. Uncover, stir, and cook until pasta is al dente. Drain, rinse under cold water, drain well. While the pasta is cooking, make the dressing by combining the tomato paste, tamari, vinegar, garlic oils, honey, lime juice and chili sauces in a pan and cook for 5 minutes. Cool, add scallions, stir to combine and pour over cooked and cooled noodles. Stir well to coat all noodles with sauce.
