Sweet Potatoes with a Ginger-Cider Reduction

• 3 medium sweet potatoes

• 4 cups fresh cider

• 1/4 cup peeled, minced fresh ginger

• 2 Tbsp butter

• Salt and pepper

Put the sweet potatoes in a large pot, add water to cover by 2 inches.

Bring to a boil, reduce heat and simmer until very tender, about 40 minutes. Drain and cool. Then peel and cut into large chunks.

Bring the cider and half the ginger to a boil in a heavy saucepan over high head. Reduce to medium, and simmer until reduced to 1 cup. about half an hour.

Transfer the cider, remaining ginger, sweet potatoes and butter to a food processor and process until very smooth.

Season with salt and pepper.
