Thai Pesto Pizza
- 2 cups loosely packed fresh Thai basil
- 2 garlic cloves, peeled
- 1/3 cup unsalted dry roasted peanuts
- 1-2 small fresh red chiles, seeded
- 1/2 tsp salt
- 1/3 cup peanut oil
- Pizza dough for one 12″ pizza
Preheat oven to 400°F. Combine basil, garlic, peanuts, chiles, and salt in a food processor and process until the mixture is a smooth paste. With the processor running add the peanut oil in a thin stream until thoroughly combined. Lightly oil a baking sheet or pizza pan and gently pull and press dough into a 12” round or rectangle shape. Top with pesto mixture and bake for about 20 minutes until the crust is golden brown on edges and bottom. Allow to rest for a few minutes then cut into wedges.
