Turkey Chili
- 1 ½ tsp olive oil
- 1 lb ground turkey
- 1 medium onion, chopped
- 2 cups water
- 1 28 oz can crushed tomatoes
- 1 16 oz can black beans, rinsed
- 1 TB minced garlic
- 1 TB chili powder
- 1 TB ancho chili powder
- ½ tsp chipotle powder
- ½ tsp dried oregano
- ½ tsp ground cayenne
- ½ tsp ground cumin
- ½ tsp salt, or to taste
- ½ tsp ground black pepper, to taste
Hearty and wonderful for a chilly evening by the fire!
Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown, chopped and stirring. Add onion and cook until tender. Pour water into the pot along with the beans, tomatoes, garlic and seasonings. Bring to a boil, reduce heat to low, cover and simmer 30 minutes.
