Watermelon and Cucumber Salad with Feta and Mint
1/2 ripe watermelon, seeded and cut into 1” cubes
1 English cucumber, peeled and sliced into thin half-rounds
3 oz. feta cheese, crumbled
2 Tbsp. chopped fresh mint
1/4 cup minced red onion
Zest and juice of one lime
3 Tbsp. olive oil
Salt and pepper to taste
In a large mixing bowl combine the watermelon, cucumber, feta, mint, red onion, lime zest, lime juice and olive oil. Mix well to combine. Season to taste with salt and pepper. Add more olive oil if the salad is too tart. Marinate for 20 minutes before serving.
