Tomato-Herb Tofu

  • 2 lb firm tofu, cut into 1” cubes
  • 1 Tbsp vegetable oil
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ cup tomato sauce of your choice
  • 2 Tbsp tamari soy sauce
  • 2 Tbsp maple syrup
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp apple cider vinegar
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dry basil
  • ½ tsp dry thyme
  • ½ tsp dry oregano
  • ½ tsp garlic salt

Preheat oven to 350º F. Drain tofu well and pat dry with paper towels. In a large bowl, toss the tofu with oil, salt & pepper. Transfer tofu onto a sheet pan and bake until almost crispy, about 10-15 minutes. In a small bowl combine the remaining ingredients and mix. Toss the cooked tofu with the sauce and bake until caramelized, about another 10-15 minutes. Serve warm or cold, keeps in the refrigerator for up to 7 days.
