HL Bakeshop’s Passion Fruit Bars
- 1 1/2 cups all purpose flour
- 1/2 cup powdered sugar
- 6 oz cold butter, cubed
- 7 eggs
- 2 1/2 cups plus 2 Tbsp sugar
- 7/8 cup passion fruit juice
- 2 Tbsp plus 1 tsp flour
Preheat oven to 325°F and spray a foil-lined rimmed baking sheet with cooking spray. Place the 1 1/2 cups flour and powdered sugar in a food processor. Pulse until combined. Add the butter and pulse until the mixture resembles coarse meal. Press evenly into the baking sheet and bake until golden, about 20 minutes. Meanwhile make the filling by whisking together all the remaining ingredients. Once crust is done, remove from the oven, pour the filling over hot crust, and return to oven. Bake 20-25 minutes until set. Cool on a wire rack to room temperature and using the foil, lift the bars out of the baking sheet. Cut into 3″ x 5″ bars.
