One Pot Linguine with Sausage and Broccolini
-1 lb linguine
-1 lb Italian sausage (hot or sweet); removed from casings
-1 yellow onion; small dice
-5 cloves garlic; minced
-2 heads broccolini or broccoli rabe; roughly chopped
-1 cup mushrooms; cut into halves or quarters
-1 can diced tomatoes
-4 cups stock (I like pork, chicken or beef)
-EVOO; as needed
-Salt and fresh cracked pepper; as desired
-Red pepper flakes; as desired
-Basil; to garnish
-Shredded parmesan; to finish
Heat a wide pan or pot that has deep sides to medium high heat. Add enough olive oil to lightly coat the bottom of the pan. Once oil is hot add sausage and spread across pan. Cook until browned on one side, flip and cook to brown again. Use your spatula to break up meat into small pieces. Add onion and garlic and sauté, stirring regularly for about a minute. Add broccolini and mushrooms and mix well. Add tomatoes, then raw pasta and pour stock over the top. Add some red pepper flakes if desired. Cover and cook for the 8-10 minutes (time may vary depending on what kind of pasta you use) until pasta is tender (al dente). Check occasionally to make sure nothing is sticking to the bottom of the pan and if it is stir and add a small bit of water. Once done season with salt and a generous amount of fresh cracked pepper. Garnish with basil and Parmesan and enjoy.
