Apricot Ginger Oatmeal Bars

  • 3/4 cup unsalted butter
  • 1 cup roughly-chopped dried apricots
  • 1/4 cup finely diced crystallized ginger
  • 1 1/2 cups oats
  • 1 cup all-purpose flour
  • 1 cup dark brown sugar, firmly packed
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 1/2 tsp vanilla extract

Preheat oven to 350°F.  Prepare a 9″ square baking dish by lightly greasing and lining with parchment.  Melt butter in a small saucepan and set aside to cool slightly.  In a large mixing bowl, combine together the apricots, ginger, oats, flour, salt and cinnamon.  Mix until well blended.  Add the vanilla and the melted butter.  Stir until a moist crumbly dough forms.  Dump the dough into the prepared pan and press firmly to pack it evenly.  Bake until golden brown, about 30-35 minutes.  Allow bars to cool slightly in the pan, before inverting over a cutting board.  Bars should come out in one solid sheet.  Cut into bar shapes.
