Beets Marinated in Honey and Thyme

  • 6-8 medium beets
  • 2 Tbsp olive oil
  • ¼ cup water
  • 2 Tbsp honey
  • 1 Tbsp apple cider vinegar
  • ½ shallot, minced
  • ½ tsp fresh thyme, chopped
  • Salt and pepper

Preheat your oven to 400. Wash beets and trim the stems and roots. Place them in a baking dish, coat them with the olive oil, and sprinkle with salt and pepper. Pour the water into the bottom of the pan and cover tightly with foil. Place in oven and cook for 1-1 ½ hours or until a knife inserted into the center of the beet comes out with no resistance. Cooking time will depend on the size of the beets. When beets are done, let cool slightly and then remove skins by rubbing them with a dry cloth or paper towel. While beets are still warm slice them into wedges and place them in a mixing bowl. In a separate bowl, combine the honey, vinegar, shallot and thyme. Mix well and pour over beets. Toss together, season with salt and pepper as needed and let marinate for 30-60 minutes before serving. Pair with fresh goat cheese for a perfect side dish!
