Bright and Zippy Braised Cabbage

  • 2 onions; thinly sliced
  • 3 cloves fresh garlic; minced
  • 1 qt. red cabbage; thinly sliced
  • 1 qt. green cabbage; thinly sliced
  • 1 cup apple juice
  • ½ cup red wine vinegar
  • ¼ cup red wine
  • ¼ cup cider vinegar
  • 2 apples; sliced
  • Fresh Parsley; chopped
  • Salt and pepper; to taste
  • Vegetable oil; as needed

Don’t turn your nose up at this cabbage dish! The use of different type of vinegars gives your taste buds a tantalizing zip and the addition of VT apples provides tang and sweetness.

Heat a medium large pot over low heat. Add enough oil to coat the pan and add onions. Sweat onions until soft and translucent. Add garlic and cabbage and cook just until the garlic becomes fragrant. Add liquid and reduce by 1/2 . Add water or vegetable stock if needed to ensure that liquid covers at least ¼ of the vegetables. Cover the pot and simmer for 30 minutes, checking occasionally. Add apples salt and pepper, and continue simmering until everything is tender. Taste and adjust seasoning as needed. Garnish with fresh chopped parsley.
