Cilantro Lime Black Beans

2 cups dried black beans, soaked in water overnight

1 (14.5oz) can diced tomatoes

1 medium yellow onion, diced

2 Tbsp lime juice

2-3 Tbsp canola oil

1 green bell pepper, diced

4 garlic cloves, minced

½ cup chopped fresh cilantro

1 tsp ground cumin

1 tsp ground coriander 

1 tsp chilli powder

Salt and pepper to taste

  1.  Place beans in a pot and cover with water 3-4 inches above the beans.  Bring the beans to a simmer and cook for 45 minutes or until the beans are tender.  Make sure there is always water in the pot, you may need to add more.  
  2. Rinse and drain the beans, set aside
  3. Heat oil in a medium pot.  Saute the onions and green pepper for 4-5 minutes over medium heat.  Add garlic and spices and continue to cook for another minute or so until the mixture is fragrant.
  4. Add diced tomatoes, beans, lime juice and cilantro.  Mix well. Cook for another 4-5 minutes until everything is heated through.  Season to taste with salt and pepper. Serve hot.
