Classic Potato Salad
- 4 cups red potatoes, large dice
- 2 hard boiled eggs, chopped
- ¼ cup diced pickles
- ¼ cup small diced, red onion
- ¼ cup small diced, celery
- ¾ cup mayonnaise
- 1 ½ TB Dijon mustard
- 1 tsp chopped dill
- 1 tsp minced garlic
- ½ tsp salt
- A few grinds of black pepper

Cook potatoes in plenty of salted water until tender. Drain well and shock in cold water, drain well. Lay out on a clean kitchen cloth to dry. In a large bowl, gently combine all ingredients.
