Classic Potato Salad

  • 4 cups red potatoes, large dice
  • 2 hard boiled eggs, chopped
  • ¼ cup diced pickles
  • ¼ cup small diced, red onion
  • ¼ cup small diced, celery
  • ¾ cup mayonnaise
  • 1 ½ TB Dijon mustard
  • 1 tsp chopped dill
  • 1 tsp minced garlic
  • ½ tsp salt
  • A few grinds of black pepper

Always welcome next to a sandwich!

Cook potatoes in plenty of salted water until tender. Drain well and shock in cold water, drain well. Lay out on a clean kitchen cloth to dry. In a large bowl, gently combine all ingredients.
