Coconut Lime Yam Puree

3 lbs. Sweet potato, peeled and diced

1 cup coconut milk

2 ½ teaspoons lime juice

½ teaspoon honey

Salt and white pepper to taste

Boil potatoes in salted water until tender.  Drain.  Place potatoes in a food processor with coconut milk, lime juice, honey.  Process until smooth.  Finish with salt and white pepper to taste.
