Cranberry Compote

  • 1 lb cranberries
  • 1 large apple
  • 1 large pear
  • ½ tsp cinnamon
  • Pinch of salt
  • ½ cup fresh orange juice
  • ¼ cup currants
  • ¼ cup maple syrup
  • 1 TB grated orange rind

Try this chunky, fruity compote as a change of pace from regular cranberry sauce. With a dollop of vanilla creme fraiche, it makes a fabulous dessert!

Peel, core and chop apple and pear into ½” pieces. Combine all ingredients in a saucepan.  Cover pan and bring to a boil over medium heat.  Uncover, stir and lower heat to simmer.  Cook for about 20 minutes, stirring occasionally until fruit is soft and the mixture has thickened.  Cool to room temperature and then refrigerate until ready to use.
