Cucumber Watermelon Quinoa Salad with Lime-Basil Vinaigrette
- 2 cups diced cucumber
- 2 cups diced watermelon
- 1/2 cup scallions, thinly sliced
- 3 cups cooked quinoa
- Juice of 2 limes
- 1/3 cup olive oil
- 1 1/2 Tbsp honey
- 2 Tabsp chopped fresh basil
- Salt and pepper, to taste
A great seasonal pairing: cukes and watermelon! The combined crunch and sweetness make a perfect summer salad.
Toss first 4 ingredients together in a bowl. Set aside. To make the vinaigrette, whisk together remaining ingredients except the basil, salt and pepper until thick. Fold in basil, salt and pepper to taste. Pour dressing over salad, toss well, and serve.
