Fresh Cut Tomato-Lime Salsa
- 3 ripe tomatoes
- 2 cloves garlic, sliced
- 2 Scallions, chopped
- 1 yellow pepper, diced
- 1/2 cucumber, diced
- 1/4 cup cilantro, chopped
- Zest and juice of one lime
- Olive oil
- Kosher salt and fresh cracked black pepper
Cut the tomatoes in half and scrape out most of the seeds. Finely chop the flesh of the tomatoes and place it in a small mixing bowl. Add the remaining ingredients, and mix well. Season to taste with salt and pepper.
