Garlicky Broccolini

2 bunches broccolini
4 cloves garlic, thinly sliced
4 Tbsp vegetable oil, divided
4 Tbsp olive oil
½ tsp crushed red pepper flakes (optional)
Salt and pepper

Trim the ends of the broccolini and discard them. Place a large frying pan over high heat. The key to this recipe is VERY high heat – make sure your pan is screaming hot – smoking! Add half the vegetable oil. Add half the broccolini – DO NOT stir! Let the broccolini sit still in the very hot oil for 30 seconds before you start to stir and toss it around. Between each stir let the broccolini sit – this gives it time to develop yummy charred little bits – that is flavor! Cook for 2-3 minutes or until the tops look wilted and the stems are bright green. Transfer to a serving dish. Repeat with the other half of the vegetable oil and the other half of the broccolini. Once all the broccolini is transferred to the dish, remove the pan from the heat and let it cool down – if you use it too hot you will burn the garlic. Some people choose to use a small, clean pan for this step. Place the cooled pan on medium heat. Add the olive oil and garlic. Saute the garlic until it is fragrant and very lightly browned around the edges. Add the crushed pepper if you want the dish to be spicy. Pour the hot garlic oil all over the broccolini. Season with salt and pepper and serve.
