Harvest Grain Bowl with Salmon

4-6 oz cooked salmon (this is a great use for leftovers!)

1 cup cooked grains of your choice (rice, quinoa, millet, etc – again, this is a great use for leftover cooked grains)

1 cup mixed greens

1 small tomato, chopped

¼ cup chopped cucumber

2 oz crumbled feta cheese

Zest and juice of 1/2 lemon

¼ cup olive oil

2 Tbsp chopped fresh parsley

1 tsp whole grain mustard

1 small shallot, minced

Salt and pepper

In a large mixing bowl combine the lemon zest and juice, olive oil, parsley, mustard, shallot and a sprinkle of salt and pepper. Mix well. Place the grains and salmon in a serving dish and drizzle half of the dressing over the top – you can make the grains and salmon hot or cold; both preparations are wonderful! To the remaining dressing add the greens, tomatoes, cucumbers, and feta. Mix well and season with additional salt if needed. Top the grains and salmon with the dressed veggies. Enjoy immediately.
