Healthy Living Café Mockamole
- ½ lb frozen shelled edaname
- ¾ cup finely chopped red onion
- ¼ cup chopped cilantro
- ¼ cup lime juice
- 1 tsp salt
- 2 tsp Melinda’s hot sauce
- ½ tsp freshly ground pepper
- ¼ cup diced tomatoes, drained and chopped
Steam edamame for about 8 minutes until soft. Dry well on paper towels. In a food processor, combine all ingredients except tomatoes and puree until almost smooth. Stir in chopped tomatoes and taste, adjusting salt and lime juice to taste.
