Healthy Living Café Mockamole

  • ½ lb frozen shelled edaname
  • ¾ cup finely chopped red onion
  • ¼ cup chopped cilantro
  • ¼ cup lime juice
  • 1 tsp salt
  • 2 tsp Melinda’s hot sauce
  • ½ tsp freshly ground pepper
  • ¼ cup diced tomatoes, drained and chopped

Steam edamame for about 8 minutes until soft. Dry well on paper towels. In a food processor, combine all ingredients except tomatoes and puree until almost smooth. Stir in chopped tomatoes and taste, adjusting salt and lime juice to taste.
