HL Café’s Curried Sweet Potato Salad
- 2 lbs sweet potato
- 2 Tbsp olive oil
- Heaping 1/4 cup mayonnaise
- 1 1/2 Tbsp chopped cilantro
- 1 1/2 Tbsp chopped parsley
- 1 heaping tsp curry powder
- 1 1/2 Tbsp mango chutney
- 2 tsp salt
- 1/2 tsp pepper
Preheat oven to 375°F and line two baking sheets with parchment paper. Medium dice sweet potatoes, toss with olive oil, and spread out on baking sheets. Roast until firm-tender, about 10 minutes. Remove from oven and let cool to room temperature. Meanwhile, combine remaining ingredients in large bowl, mixing to incorporate thoroughly. When sweet potatoes are ready, transfer them to the bowl and toss to combine with dressing.
