Kids Veggie Tacos

-1 lb. root vegetable of your choice; diced

-EVOO; as desired

-Salt and fresh cracked pepper

Preheat the oven to 400 degrees. Toss root veggies with salt, pepper and EVOO and place on a baking sheet lined with parchment paper. Roast for about 20-30 minutes until golden brown and tender. Serve on a tortilla with garnish of your choice.
