Maple Raisin and Walnut Tofu Spread

  • 12 oz firm silken tofu
  • 6 TB almond butter
  • 3 TB maple syrup
  • 3 tsp vanilla extract
  • 11/2 tsp cinnamon
  • 3 TB chopped walnuts
  • 3 TB chopped raisins

Maple Raisin and Walnut Tofu Spread

Unpack tofu and blot with paper towels or a clean cloth to remove excess moisture. Place tofu, almond butter, vanilla and cinnamon in a food processor and blend until smooth. (This can also be done by hand using a pastry blender or other mashing tool.) Transfer to a bowl and stir in the walnuts and raisins.

Serve on toasted bagels or crackers.

Makes about 1 1/2 cups.
