Pineapple and Mint Salsa Fresca
- 1 fresh pineapple, cored, peeled, and finely chopped
- 2 jalapenos, seeded and finely diced
- 2 TB fresh mint leaves, finely chopped
- Juice of 2 limes
- Salt to taste
This unexpected combination of fruit and herb makes for a surprising and delightfully sweet-tangy flavor! Try it with tortilla chips, tacos, or grilled meat and fish!
Combine all ingredients in a bowl and mix well. Let sit for 15-20 minutes. Can be made one day ahead and kept chilled.
