Roasted Acorn Squash with Maple Butter
- 1 squash; cut in ½ and seeded
- Vegetable oil
- 1 stick unsalted butter; at room temperature
- 2-3 Tbsp. Maple Syrup
- Salt; to taste
Preheat oven to 400 degrees. Rub squash with a small amount of vegetable oil and place skin side up on a metal baking sheet. Roast until tender and lightly browned. Meanwhile, make the butter. Combine softened butter with maple syrup in a small bowl until smooth. Season to taste with salt, and slather roasted squash liberally before serving in the skin.
