Roasted Butternut Squash

  • 2 butternut squash, peeled and cut into ¾ inch dice
  • 1/3 cup olive oil
  • 1 Tbs salt
  • 2 Tbs herbs de province

Preheat oven to 325 F. In a large bowl combine all ingredients and toss to evenly coat. Arrange in a single layer on a sheet try and roast until tender and golden brown, about 15 minutes.
