Stout Mustard

  • 1 cup brown mustard seed
  • 1 cup yellow mustard seed
  • ½ cup Guinness stout
  • ½ cup water
  • ¼ cup honey
  • 2 Tbsp cider vinegar
  • 1 Tbsp salt
  • 1 tsp pepper

Mustard is a venture for the patient cook. The process is easy, but takes about 4 days to complete so plan ahead! And remember, Mustard gets better with time so the longer you can rest your mustard the better it will taste! To begin, mix all ingredients together in a stainless steel or glass container. Place in the fridge for 2 days to soak. After 2 days, transfer mixture to a blender and blend. If you like a smooth mustard blend a lot, if you like a mustard with some whole seeds, only blend a little. After blending transfer mustard to a storage container and return to the fridge for 2 more days. After 2 days taste and adjust for seasoning. The longer you let your mustard rest the better it will taste!
