Summer Succotash

¼ cup red onion, small dice

1 cup lima beans, frozen

1 cup corn, frozen

1 cup green beans, frozen

1 Tbsp rice syrup

¼ tsp dried basil

¼ cup olive oil

1 Tbsp lemon juice

Salt and pepper to taste

  1. Mix together red onion, olive oil, lemon juice, rice syrup and dried basil in a bowl to create a dressing.  Set aside.
  2. Heat a large pot of water on high heat.  Once the water reaches a rolling boil, cook the green beans, lima beans, and corn for about 2-3 minutes and drain.  
  3. Toss the vegetables in the dressing.  
  4. Before serving, cook the dressed vegetables in a saute pan on medium heat for 2-3 minutes.  Season with salt and pepper to taste.
