Sweet Potato Hash

2 ½ pounds sweet potatoes, peeled and diced

2 cups onions, small diced

1 cup green bell pepper, small diced

1 cup red bell pepper, small diced

2 cloves garlic, minced

1 pinch coriander

¼ cup and 2 tablespoons canola oil, divided

Salt and pepper, as needed

Preheat oven to 425 degrees.  In a large bowl, toss the potatoes in ¼ cup oil, salt, pepper, and coriander.  Spread potatoes out on a sheet pan and roast in the oven for 35 minutes.  Set aside.

Heat 2 tablespoons of oil in a pan on medium-high heat.  Add onions, peppers, and garlic and saute until they are translucent.  Add to the sweet potatoes and serve.
