Tender and Flakey Pie Pastry

  • 2 ½ cups all purpose flour
  • 1 cup cold, cubed, unsalted butter
  • ¼ tsp salt
  • ¼ – ½ cup ice cold water

Begin by preparing your ice water. It is important that it is very cold. It is best to make pie pastry by hand, but you may also use a mixer with paddle attachment. In a large bowl combine the flour and salt. Add the butter (it must be COLD). Using a pastry cutter, cut the butter into the flour until the butter is in pea sized pieces. Slowly pour the ice water a couple Tablespoons at a time into the mixture. Using a fork, press the dough together, do not stir or use your hands, just fold and press. Keep adding water and pressing the dough until it comes together into one mass. Use your hands very briefly to form a ball. Wrap the ball in plastic or waxed paper, press into a disc and refrigerate for at least 30 minutes. After the dough has rested, cut into two pieces, form two balls and roll each piece on a floured work surface. Follow pie recipe for baking instructions.
