Tomatillo Avocado Salsa
- 1 1/2 lbs tomatillos
- 2 firm but ripe avocados
- 3 TB finely chopped red onion
- 1/2 cup chopped cilantro
- 4 TB lime juice
- 2 tsp toasted cumin
- 1/4 tsp sugar
- 2 small jalapenos, seeded and diced
- Salt, to taste
- 2 TB olive oil
Creamy, crunchy, spicy, and bright- this beautiful summer salsa has it all! Sprinkle some queso fresco on right at the end if you want to add cheesy goodness.
Husk the tomatillos, rinse them, and cut into 1/4” pieces. Peel, pit and chop the avocado into 1/4” pieces. Thoroughly combine the tomatillos, avocado, red onion, cilantro, lime juice, cumin, sugar, jalapenos in a bowl and salt to taste. Add more lime juice if needed for a good salt-sour balance. Drizzle olive oil over
salsa and gently stir to combine.
