Vegan Chocolate Chip Cookies with Coconut Oil

  • 1 Tbsp flax meal
  • 1/4 cup + 3 Tbsp water, divided
  • ½ cup coconut oil, softened
  • ½ cup brown sugar
  • 1/3 cup granulated sugar
  • Seeds from 1 vanilla bean
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup semisweet chocolate chips

Preheat oven to 350F and line two baking sheets with parchment paper.  Mix together flax meal and 3 Tbsp water in small bowl and set aside.  Using a stand mixer fitted with paddle attachment, cream coconut oil with sugars until thoroughly combined, then add the flax mixture and vanilla seeds on beat on medium speed until light and fluffy.  Meanwhile, in separate bowl, mix together flour, baking soda, and salt.  Add to wet ingredients in three installments and mix on low speed until just combined.  Mixture will be quite dry. Add the remaining water and stir by hand to combine.  Fold in chocolate chips.  Place dough by the heaping tablespoon on sheets 2” apart and bake until edges are just set, about 10-12 minutes.  Cool cookies on baking sheet for a few minutes then transfer to wire rack to continue cooling.
