Waldorf Rice Salad

  • 1 large sweet, crisp apple
  • 2 TB fresh lemon juice
  • 3 cups cold cooked brown Jasmine rice
  • ¾ cup raisins
  • ¾ cup chopped celery
  • ½ cup chopped walnuts
  • ¼ cup minced scallions
  • ½ cup mayonnaise or yogurt
  • 1 tsp Dijon mustard
  • 2 TB cider vinegar
  • 1 tsp sugar
  • ½ tsp salt

Dice the apple and place in a large bowl with the lemon juice. Add the rice, raisins, celery, walnuts and scallions. In a small bowl, mix together the mayonnaise or yogurt, mustard, vinegar, sugar and salt. Whisk the oil in until smooth. Pour over salad and toss to coat. Cover and refrigerate for a half hour before serving.
