Curried Turkey Salad
- 1/2 cup yogurt or mayo
- 2 Tbsp olive oil
- 4 tsp freshly squeezed lemon juice
- 2 tsp curry powder
- 2 tsp shallot, peeled and minced
- 2 tsp ginger, peeled and minced
- 2 cups leftover roasted turkey, medium dice
- 1/2 cup diced apples
- 1/4 cup raisins
- 3 Tbsp cilantro, chopped
- Kosher salt and fresh cracked black pepper
Whisk together yogurt or mayo, olive oil, lemon juice, curry powder, shallot, and ginger in a medium bowl until well combined. Add remaining ingredients and stir until well coated. Season with salt and freshly ground black pepper to taste. Serve over fresh greens or on sandwich bread.
