Classic Meatloaf
- 1 large onion; finely diced
- 1 green bell pepper; finely diced
- 1 small zucchini; finely diced
- 2 medium carrots; finely diced
- 3 cloves garlic; minced
- ½ tsp. thyme
- ½ tsp. oregano
- ½ tsp. allspice
- 2 tsp. salt
- 1 tsp. ground black pepper
- 1 ½ cups breadcrumbs
- 1 cup milk
- 2 eggs
- 2 lb. ground beef
- Ketchup; as needed
Tender, juicy beef seasoned to perfection and topped with ketchup. A true classic!
In a medium sauté pan, sweat onion, pepper, zucchini, and carrots in a small amount of vegetable oil. Cook until tender and sweet smelling. Add garlic and herbs and continue cooking until very fragrant- about 1 minute. Remove from heat and set aside to cool. Mix together the bread crumbs and milk in a small bowl. Set aside to soften. Beat eggs and add to the milk mixture. Combine vegetable mixture with milk mixture and the ground beef. Mix together with hands until just barely combined. Form into loaves and place in a loaf pan or on a baking sheet. Slather the tops with ketchup and bake at 400 degrees for 15 minutes. Lower temperature to 325 degrees and continue cooking until done. Remove from oven when internal temperature reaches 160 degrees.
