Shrimp Fried Rice
- 2 Tbsp vegetable oil
- 2 Eggs, beaten
- 2 cups minced scallion
- 1 Tbsp minced ginger
- 3/4 lb peeled and cooked shrimp
- 1 3/4 cup frozen peas
- 5 cups cooked rice, cold and separated with a fork
Sauce:
- 2 Tbsp chicken stock
- 2 Tbsp rice wine
- 1 Tbsp soy sauce
- 1 tsp salt
- 1 tsp toasted sesame oil
- 1/4 tsp ground black pepper
Begin by preparing the sauce. Mix all sauce ingredients together and set aside. In a large pan or wok over high heat add the oil. Add the egg and cook 1 minute to scramble. Then add the scallion and ginger and cook until fragrant. Add the shrimp and peas and cook until heated through, then add the rice. Pour the sauce over the top and cook, mixing well until everything is evenly coated and heated through.
