Som Tam (Green Papaya Salad)
- 1 medium green papaya; shredded
- 1 carrot; shredded
- 1 tomato; cut into 3/4 inch wedges
- 1/3 cup green beans; halved
- 8-10 mint leaves; cut into thin strips
- 1/4 cup ground roasted peanuts
- Juice from 2 limes
- 4 Tbsp fish sauce
- 3 Tbsp sugar
In a small bowl, whisk together lime juice, fish sauce, and sugar. Pour over all the other ingredients and toss to combine. This can be made up to 4 hours ahead and left to marinate.
