Cherie’s Springtime Sweet Baked Brie
- 1 package puff pastry
- 1/4 cup strawberry-rhubarb jam
- 1 small wheel brie or camembert
- 2 tsp balsamic glaze
- 1/3 cup sliced almonds, coarsely chopped
Thaw puff pastry according to package directions. Preheat oven to 375F and line baking sheet with parchment paper. Remove puff pastry, cut in half to make two roughly square-shaped pieces. Cut brie through the center into two rounds and place one of the rounds, cut side up, in the middle of the pastry. Spread jam on top, drizzle with balsamic glaze, place remaining half of cheese on top, cut side down, and sprinkle with almonds. Fold puff pastry up and over brie, pinching edges together to seal. Bake for 25-30 minutes or until pastry is golden brown. Remove from oven, transfer to platter, and serve with bread or crackers.
